Cheesy Goodness


Remeber when I posted the "Taco Pie" recipe (that remained as the only post for much too long?...my humble apologies)? I heard several of you made that delicious pie, which I have yet to eat. Very sad...Katie offered to make it for me when I was off my last round of detox. Well sadly, I forgot to tell her I was off of it and missed my chance as I am now "detoxing" again. I've also noticed that whenever I'm on my detox time, I suddenly become enthralled with looking at cookbooks and I pull out all my "Rachel Ray" magazines and pour over the pages.

Well, this time, I'm craving fondue...maybe it's that I'm missing Jeff & Janet, or maybe it's that I bought a fondue pot and I'm aching to use it. Who can say? So, since I can't eat it, I'm going to share a recipe with all of you just in case one of you wants to eat it for me. :)
It's from "The Melting Pot" and it's their classic cheese fondue recipe:
  • Ingredients:Equal Parts (50-50) Sharp cheddar and Emmanthaler cheese, enough for about 1 1/2 to 2 cups

  • about 1/3 cup beer

  • 1 clove garlic (optional)

  • dash or two worchestireshire sauceabout

  • 1 teas. mustard powder

  • dash cayenne pepper
Bread cubes, apples, celery, carrots, etc.
Directions:Get the beer very hot (enough to melt the cheese) and then add cheese, stirring to acheive the desired consistency. There are no rules here, just use your judgement to get a nice, creamy consistency and flavor). Add other ingredients and mix.
Janet, if you're reading this, my guess is that it's not half as good as yours, but it's an attempt. :) And Kase, I'm sure this really doesn't compare to how they do it up in my motherland...oh yeah, tell my kinsmen hello! :)

so, tam, I guess I forgot the Warcestershire sauce and the Pepper, but I still think it would have tasted the same. And I was not 'sure'...I was 'almost positive'. :) -Heidi

Heidi...I was actually impressed when I found the recipe that you had remembered so much! There was one recipe that said you mix flour and cheese together...but I didn't remember that, so I think it was a fraud! :)
I'll have to remember that when you're "almost positive", that's one step being COMPELETELY accurate from being "sure"!

What in the crap are you talking with the whole "detox" thing? Are you trying to beat heroin?

Jonathan...someone asked me that the other day when they wanted to order in at work and I said I couldn't. Nope, it's a healthy, organic thing. I know, it sounds crazy...but that's what I'm doing. :)
